Zucchini Soup

A no-fuss soup of zucchini, onion and vegetable broth, done in roughly 40 minutes.

Ingredients

• 540g zucchini
• 36g onion
• 900g vegetable broth
• 24g olive oil

Method

1. Heat the olive oil in a large pot and sweat the onion for 3 minutes.
2. Add the zucchini and cook for 5 minutes, stirring.
3. Pour in the vegetable broth, bring to a boil, then simmer for 20 minutes until everything is tender.
4. Blend until smooth, or leave chunky, and season to taste.
