Zucchini Soup

Ingredients
- 540g zucchini
- 36g onion
- 900g vegetable broth
- 24g vegetable oil
- 9g fresh basil
Method
- Heat the vegetable oil in a large pot and sweat the onion for 3 minutes.
- Add the zucchini and cook for 5 minutes, stirring.
- Pour in the vegetable broth, bring to a boil, then simmer for 20 minutes until everything is tender.
- Blend until smooth, or leave chunky, and season to taste.
- Stir the fresh basil through just before serving.
