Ingredients
- 600g bell pepper, halved and cored
- 200g spinach, chopped
- 100g feta cheese, crumbled
- 200g white rice, cooked
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 2g dried oregano
Method
- Preheat the oven to 190°C (375°F).
- Sauté garlic and spinach in olive oil until wilted; stir in the cooked rice, feta and oregano.
- Fill the pepper halves with the mixture and arrange on a baking sheet.
- Bake 25–30 minutes until the peppers are tender.
