Shrimp Noodle Stir-Fry

Pad-Thai-inspired noodles with shrimp, egg and peanut.

Ingredients

• 300g pasta
• 300g shrimp
• 2 eggs egg, beaten
• 100g bell pepper, sliced
• 40g green onion, sliced
• 3 tbsp soy sauce
• 20g lime, juiced
• 2 tbsp peanut butter
• 2 cloves garlic, minced

Method

1. Cook the noodles according to package directions and drain.
2. Stir-fry shrimp and garlic until just pink, then push aside and scramble in the egg.
3. Add bell pepper, noodles, soy sauce, peanut butter and lime juice; toss to combine.
4. Top with green onion.
