Peanut Chicken Noodle Salad

Cold noodles with chicken and vegetables in peanut-lime dressing.

Ingredients

• 300g pasta
• 300g chicken breast
• 100g carrot, julienned
• 100g cucumber, julienned
• 30g green onion, sliced
• 3 tbsp peanut butter
• 2 tbsp soy sauce
• 20g lime, juiced
• 1 clove garlic, minced
• 3g ginger, minced

Method

1. Cook the noodles, rinse under cold water and drain well.
2. Cook the chicken in a skillet until done, then slice.
3. Whisk peanut butter, soy sauce, lime juice, garlic and ginger with a splash of water into a dressing.
4. Toss the noodles, chicken and vegetables with the dressing.
