Minestrone Soup

A vegetable-forward Italian soup with beans and small pasta.

Ingredients

• 1 can kidney beans
• 100g pasta
• 150g carrot, diced
• 150g zucchini, diced
• 1 can tomatoes
• 100g onion, diced
• 2 cloves garlic, minced
• 800ml vegetable broth
• 2 tbsp olive oil
• 3g italian seasoning
• 20g parmesan cheese, grated

Method

1. Sauté onion, carrot and garlic in olive oil until softened.
2. Add broth, canned tomato and italian seasoning; bring to a simmer.
3. Add the pasta and zucchini and cook 10 minutes, then stir in the beans and heat through.
4. Serve with grated parmesan.
