- 600g potato, diced
- 100g bacon, chopped
- 100g cheddar cheese, shredded
- 60g sour cream
- 20g green onion, sliced
- 2 tbsp olive oil
Method
- Cook the bacon in a skillet until crisp; remove and set aside, leaving the fat in the pan.
- Add the potatoes and olive oil, cover, and cook 15–18 minutes, stirring occasionally, until tender and golden.
- Top with cheese and cover briefly to melt.
- Finish with bacon, sour cream and green onion.
