- 500g eggplant, sliced
- 1 can tomatoes
- 150g mozzarella cheese, shredded
- 40g parmesan cheese, grated
- 80g panko breadcrumbs
- 1 egg egg, beaten
- 40g all-purpose flour
- 3 tbsp olive oil
- 5g fresh basil
Method
- Preheat the oven to 200°C (400°F). Dredge eggplant slices in flour, egg, then panko.
- Pan-fry in batches in olive oil until golden on both sides.
- Layer eggplant, canned tomato and cheeses in a baking dish, finishing with cheese on top.
- Bake 20 minutes until bubbling and golden; top with basil.
