Ingredients
- 500g chicken thigh, cubed
- 150g greek yogurt
- 30g lemon, juiced
- 2 cloves garlic, minced
- 150g cucumber, diced
- 150g tomato, diced
- 1 tbsp olive oil
- 3g dried oregano
- 250g white rice
Method
- Mix half the yogurt with lemon juice, garlic and oregano; toss with the chicken and marinate 15 minutes.
- Cook the rice according to package directions.
- Sear the chicken in olive oil over medium-high heat until cooked through, about 10 minutes.
- Serve over rice with cucumber, tomato and a dollop of the remaining yogurt.
