Ingredients
- 300g lentils
- 150g carrot, diced
- 150g onion, diced
- 3 cloves garlic, minced
- 1 can tomatoes
- 2 tbsp olive oil
- 500ml vegetable broth
- 2g dried oregano
- 1 bay leaf
Method
- Sauté onion, carrot and garlic in olive oil until softened, about 5 minutes.
- Add lentils, canned tomato, broth, oregano and the bay leaf.
- Simmer 30–35 minutes until the lentils are tender, then remove the bay leaf and season to taste.
