Ingredients
- 2 cans chickpeas, drained and rinsed
- 400g potato, diced
- 150g onion, diced
- 3 cloves garlic, minced
- 8g ginger, minced
- 6g curry powder
- 1 can tomatoes
- 300ml vegetable broth
Method
- Sauté onion, garlic and ginger until soft; stir in curry powder.
- Add potato, canned tomato and broth; simmer 15 minutes.
- Stir in the chickpeas and continue cooking until the potato is tender, about 10 minutes.
