- 300g lentils
- 400ml coconut milk
- 150g onion, diced
- 3 cloves garlic, minced
- 8g ginger, minced
- 6g curry powder
- 1 can tomatoes
- 10g cilantro
Method
- Sauté onion, garlic and ginger until fragrant.
- Stir in curry powder and cook 30 seconds, then add lentils, canned tomato and coconut milk.
- Simmer 25 minutes, stirring occasionally, until the lentils are tender.
- Top with cilantro.
