Ingredients
- 2 cans chickpeas, drained and rinsed
- 200g spinach
- 150g onion, diced
- 3 cloves garlic, minced
- 8g ginger, minced
- 6g curry powder
- 400ml coconut milk
- 1 can tomatoes
Method
- Sauté onion, garlic and ginger until soft, then stir in curry powder for 30 seconds.
- Add chickpeas, canned tomato and coconut milk; simmer 15 minutes.
- Stir in spinach and cook until wilted.
