Chicken Fried Rice

A classic fried rice with chicken, egg and vegetables.

Ingredients

• 400g white rice, cooked and cooled
• 300g chicken breast, diced
• 2 eggs egg, beaten
• 100g carrot, diced
• 40g green onion, sliced
• 100g corn kernels
• 3 tbsp soy sauce
• 1 tbsp sesame oil
• 5g ginger, minced
• 2 cloves garlic, minced

Method

1. Cook the chicken in sesame oil until browned; push to one side of the pan.
2. Add the egg to the other side and scramble, then mix with the chicken.
3. Add carrot, corn, garlic and ginger; stir-fry 2 minutes.
4. Add the rice and soy sauce, tossing until heated through, then top with green onion.
