Chicken Enchiladas
Rolled tortillas with chicken and cheese baked in a tomato sauce.

Ingredients
- 400g chicken breast, cooked and shredded
- 8 tortillas tortilla
- 1 can tomatoes
- 150g cheddar cheese, shredded
- 100g onion, diced
- 3g ground cumin
- 3g chili powder
- 60g sour cream
Method
- Preheat the oven to 190°C (375°F). Sauté onion, then stir in canned tomato, cumin and chili powder to make the sauce.
- Mix the chicken with a little sauce and roll into the tortillas; arrange in a baking dish.
- Pour the remaining sauce over the top and sprinkle with cheese.
- Bake 20 minutes until bubbling; serve with sour cream.
