- 1 can black beans
- 150g corn kernels
- 150g cheddar cheese, shredded
- 4 tortillas tortilla
- 100g bell pepper, diced
- 80g onion, diced
- 3g ground cumin
- 80g salsa
Method
- Sauté onion and bell pepper until soft, then stir in the beans, corn and cumin.
- Spread the mixture and cheese over half of each tortilla, fold over, and pan-fry until golden and crisp on both sides.
- Slice into wedges and serve with salsa.
