Bell Pepper Soup

A no-fuss soup of bell pepper, ginger and vegetable broth, done in roughly 40 minutes.

Ingredients

• 540g bell pepper
• 36g ginger
• 900g vegetable broth
• 24g vegetable oil

Method

1. Heat the vegetable oil in a large pot and sweat the ginger for 3 minutes.
2. Add the bell pepper and cook for 5 minutes, stirring.
3. Pour in the vegetable broth, bring to a boil, then simmer for 20 minutes until everything is tender.
4. Blend until smooth, or leave chunky, and season to taste.
