Bell Pepper Soup

This easy soup keeps things simple: bell pepper, ginger and vegetable broth, on the table in 40 minutes.

Ingredients

• 540g bell pepper
• 36g ginger
• 900g vegetable broth
• 24g sesame oil
• 9g dried oregano

Method

1. Heat the sesame oil in a large pot and sweat the ginger for 3 minutes.
2. Add the bell pepper and cook for 5 minutes, stirring.
3. Pour in the vegetable broth, bring to a boil, then simmer for 20 minutes until everything is tender.
4. Blend until smooth, or leave chunky, and season to taste.
5. Stir the dried oregano through just before serving.
